We have joined forces with three other local authorities in Norfolk to help caterers comply with new EU food hygiene laws.  
 
Since 1 January 2006 food legislation requires that food businesses must have a written food safety management system.  To help businesses comply, the Food Standards Agency (FSA) has developed Safer Food Better Business (SFBB) - a custom-made pack designed to make it easy to develop a food safety management suited to your own catering or  retail operation.  SFBB is about identifying what you do already to ensure the safety of food and making sure your checks are appropriate and being applied.  Having a food safety management system saying what you do to make food safe to eat. 
 
The amount of documentation required depends on the size and type of business.  Large food factories should already have a Hazard Analysis and Critical Control Point (HACCP) system.  This is appropriate for businesses producing large quantities of similar types of food and can be quite complicated.  For smaller food businesses like pubs, restaurants and cafes where things are constantly changing, a different approach is needed. 
 
Safer Food Better Business (SFBB) is a pack designed to help smaller food businesses comply with this legal requirement.  There are packs for both caterers and retailers.  They also help businesses run more efficiently by reducing wastage, and customer complaints as well as improving food safety.  The packs have been designed by the Food Standards Agency in consultation with the catering industry and are custom-made, designed to take the drudgery (and expense) out of developing a food safety management system from scratch. 
 
We are now providing training in the correct use of the SFBB packs, involving  seminars and one to one coaching which could have otherwise cost food businesses over £300.  Current fee of £45.00 per business (maximum of 2 people from each business), which is designed for the person who is implementing the pack - normally the Food Business Operator or the Head Chef, but is also of use to any staff members who are going to use the pack and will also serve as a good hygiene refresher course.   
 
Although the SFBB pack is a useful staff training aid in terms of the safe methods you expect them to adopt in your business, it is NOT a replacement for formal food hygiene training, which provides staff with a good grounding of the fundamentals of food hygiene.  SFBB training and formal food hygiene training are very different.  The SFBB training focuses on how to complete a written food safety management system.
 
Further Food Hygiene Training accredited by the Chartered Institute of Environmental Health (CIEH) is available through the Borough Council although there are other formal food hygiene training providers available.
